The Vinification Winery ~

Built on an inferior level floor from the pressing room, this winery dates of  1995. It gives us the possibility to carry on with the gravity using. So, grapes juices are receipt here and vinified in tanks with temperature controls.



In majority, we use small capacity tanks (20 to 65 hectoliters), in oder to seperate futur wines of each "terroir" origines and dissociate the different quality of juices during the pressing process : (running of juice, 1st, 2sd and 3th press-juice and the last juice).


Biggers stainless stell vats are used after to make rackings (clear wine seperation of the dead yeast called lees), blends, and filterings.
